Baked Beet Chips
3-4 large beets
2 tbsp extra virgin olive oil
1 tsp kosher salt and pepper

Avocado and Goat Cheese Dip
1 large avocado
2 tbsp fat free sour cream
2 oz of goat cheese
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp Cajun seasoning
1 tsp lemon juice
salt and pepper to taste
