When we think of winter vegetables, we often think of roasting. But here is a yummy, bright and crisp coleslaw recipe that uses winter vegetables in a different way. This recipe is presented to us from FitNutinterColeslawWithHoneyMustardDressing

Ingredients:

3 cups shredded winter squash
3 cups green cabbage, ribbon cut in very thin strips
3 tbsp finely chopped onion
1/2 cup fresh parsley, minced
2 tbsp fresh celery (with leaves as available), finely chopped
1/2 jicama, peeled and shredded
1/2 cup Honey Mustard Vinaigrette (see FitNut for additional recipe)
Salt to taste
